Zielsetzung: Das Arbeitsblatt behandelt die Eigenschaften von Anthocyanen als natürlichen pH-Indikatoren. Die Lernenden schlüpfen in die Rolle eines Forschungsteams in der Lebensmittelanalyse, um zu überprüfen, inwieweit natürliche Pflanzenfarbstoffe künstliche Farbstoffe ersetzen oder als Indikatoren dienen können.


Inhalte und Methoden: Die Inhalte werden durch die Kombination aus Fachtexten, Experimenten, spielerischen Elementen und kreativem Transfer vermittelt: Zunächst werden Anthocyane als natürliche Pflanzenfarbstoffe sowie ihr farbabhängiges Verhalten in sauren, neutralen und basischen Lösungen erarbeitet. Anschließend vertiefen die Lernenden ihr Verständnis durch ein pH-Schätzspiel, Experimente und Untersuchungen zum Temperatureinfluss auf die Extraktion. Abschließend sichern Quiz- und Transferaufgaben sowie ein Rollenspiel zur Nutzung natürlicher Farbstoffe das Wissen und fördern die Anwendung im Alltag.
